its my old lady's dad, said he'd give me a helluva deal...didn't say how much there 7.5's, what do you guys think?

Don't pay more than 60 bucks. Miles don't really affect rear end gears that much so long as they are installed right.
What do you have now, auto or manual? Keep in mind, that it will cost another 100-200 for installation.

5 spd... my uncle said he would install them for $75 at his shop

4:10s are fine. people at my track are running 4:30s in 8.8 rears on turbo 4s.
